Chicken in tomato sauce recipe
This is a quick and easy one-pan dish of seared chicken breasts cooked in a flavourful and creamy tomato sauce. It’s a perfect midweek meal that takes only 30 minutes to make with your Cosmopolitan Cookware!
INGREDIENTS
- 2 tablespoons olive oil
- 3 boneless skinless chicken breasts
- 2 teaspoon dried basil, divided
- A few sprigs fresh thyme, picked, divided
- Salt and freshly ground black pepper to taste
- 1 tablespoon butter
- 1 yellow onion finely chopped
- 2 cloves garlic minced
- 1 cup dry white wine (can use water instead)
- 1 can diced tomatoes
- 3 tablespoons tomato paste
- 1 teaspoon oregano (fresh or dried)
- 1/3 cup cream
- 1/4 cup chopped fresh parsley for garnish
DIRECTIONS
- Heat the olive oil in a medium sized pan.
- Season the chicken breasts with 1 teaspoon dried basil, half the fresh thyme, salt, and pepper.
- Add the chicken breasts to the pan and cook over medium-high heat, 3
to 4 minutes per side, or until lightly browned. - Remove chicken breasts from the pan and set aside.
- Add the butter to the pan and melt.
- Add the diced onions and cook for 4 minutes.
- Stir in the garlic and cook for 30 seconds.
- Stir in the wine to dissolve the brown pieces (frond) found at the bottom of the pan; continue to cook for another 4 minutes, or until the liquid has reduced.
- Mix in the tomatoes, tomato paste, oregano, second teaspoon of basil, the remaining thyme and cream.
- Place chicken back in the pan.
- Bring to a boil; cover and simmer over medium-low heat for 8
minutes, or until chicken is cooked through. - Remove from the heat.
- Garnish with parsley and serve directly from your beautiful Pres Les Cosmopolitan Cookware, as the centerpiece of your dining table.
