This is a quick and easy one-pan dish of seared chicken breasts cooked in a flavourful and creamy tomato sauce. It’s a perfect midweek meal that takes only 30 minutes to make with your Cosmopolitan Cookware!

INGREDIENTS

  • 2 tablespoons olive oil
  • 3 boneless skinless chicken breasts
  • 2 teaspoon dried basil, divided
  • A few sprigs fresh thyme, picked, divided
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon butter
  • 1 yellow onion finely chopped
  • 2 cloves garlic minced
  • 1 cup dry white wine (can use water instead)
  • 1 can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 teaspoon oregano (fresh or dried)
  • 1/3 cup cream
  • 1/4 cup chopped fresh parsley for garnish

DIRECTIONS

  1. Heat the olive oil in a medium sized pan.
  2. Season the chicken breasts with 1 teaspoon dried basil, half the fresh thyme, salt, and pepper.
  3. Add the chicken breasts to the pan and cook over medium-high heat, 3
    to 4 minutes per side, or until lightly browned.
  4. Remove chicken breasts from the pan and set aside.
  5. Add the butter to the pan and melt.
  6. Add the diced onions and cook for 4 minutes.
  7. Stir in the garlic and cook for 30 seconds.
  8. Stir in the wine to dissolve the brown pieces (frond) found at the bottom of the pan; continue to cook for another 4 minutes, or until the liquid has reduced.
  9. Mix in the tomatoes, tomato paste, oregano, second teaspoon of basil, the remaining thyme and cream.
  10. Place chicken back in the pan.
  11. Bring to a boil; cover and simmer over medium-low heat for 8
    minutes, or until chicken is cooked through.
  12. Remove from the heat.
  13. Garnish with parsley and serve directly from your beautiful Pres Les Cosmopolitan Cookware, as the centerpiece of your dining table.
