This is a quick and easy one-pan dish of seared chicken breasts cooked in a flavourful and creamy tomato sauce. It’s a perfect midweek meal that takes only 30 minutes to make with your Cosmopolitan Cookware!


  • 2 tablespoons olive oil

  • 3 boneless skinless chicken breasts

  • 2 teaspoon dried basil, divided

  • A few sprigs fresh thyme, picked, divided

  • Salt and freshly ground black pepper to taste

  • 1 tablespoon butter

  • 1 yellow onion finely chopped

  • 2 cloves garlic minced

  • 1 cup dry white wine (can use water instead)

  • 1 can diced tomatoes

  • 3 tablespoons tomato paste

  • 1 teaspoon oregano (fresh or dried)

  • 1/3 cup cream

  • 1/4 cup chopped fresh parsley for garnish


  • Heat the olive oil in a medium sized pan.
  • Season the chicken breasts with 1 teaspoon dried basil, half the fresh thyme, salt, and pepper.
  • Add the chicken breasts to the pan and cook over medium-high heat, 3
    to 4 minutes per side, or until lightly browned.
  • Remove chicken breasts from the pan and set aside.
  • Add the butter to the pan and melt.
  • Add the diced onions and cook for 4 minutes.
  • Stir in the garlic and cook for 30 seconds.
  • Stir in the wine to dissolve the brown pieces (frond) found at the bottom of the pan; continue to cook for another 4 minutes, or until the liquid has reduced.
  • Mix in the tomatoes, tomato paste, oregano, second teaspoon of basil, the remaining thyme and cream.
  • Place chicken back in the pan.
  • Bring to a boil; cover and simmer over medium-low heat for 8
    minutes, or until chicken is cooked through.
  • Remove from the heat.
  • Garnish with parsley and serve directly from your beautiful Pres Les Cosmopolitan Cookware, as the centerpiece of your dining table.
